Cooking time: 1-1 ½ hour
INGREDIENTS:
2 tbsp oil
3 cloves garlic, crushed
1 onion, minced
1 kilo chicken (thigh or legs)
Pork (liempo), cut into cubes
1 tsp salt
1 potato, peeled and diced
1 carrot, peeled and diced
1 tomato, diced
½ cup fresh or frozen green peas
1 bell pepper, diced
1 cup (250ml) water
2 bay leaves
1 pack DEL MONTE tomato sauce
2 tbsp ketchup
1 tbsp fish sauce
Salt and pepper to taste
1 tbsp MAMA SITA’S MENUDO/ AFRITADA MIX
HOW TO COOK:
§ Heat a large skillet over medium heat. Add oil.
§ Add garlic, sauté until lightly brown.
§ Add in onion, sauté until translucent, then goes in the tomatoes too.
§ Add the chicken/ pork, pinch of salt and pepper. Cook until it’s tender.
§ Add in the carrots, potatoes and 250ml water. Bring to a boil
§ Stir in the DEL MONTE tomato sauce and ketchup. Let it boil again.
§ Add in the green peas, bell peppers, fish sauce and 1 tbsp MAMA SITA’S MENUDO/ AFRITADA MIX
§ Simmer on low heat for about 20min.
§ Serve with steamed rice.
